About The Recipe

To start with the recipe knead a semi-stiff wheat flour dough.Then boil some potatoes and mash them. For stuffing, heat the ghee in the pan and add some cumin seeds. Then add some green chillies according to your taste and preferences and saute them. Then add the mashed potatoes followed by red chilli powder, salt, amchur powder and some fresh coriander.

The stuffing for the aloo paratha is ready. Take the kneaded dough and divide it into small portions. Then roll it into small rotis. Put the stuffing in the centre of the roti and pull all the sides together. Flatten the stuffed dough and put it in the hot greased pan. Let it cook for two minutes until it is brown in colour. Your hot stuffed paratha is ready to be served   .

Ingredients (serving 1)

For the dough:

  • 2 cup wheat flour
  • ½ tsp salt
  • water
  • 2 tbsp oil

For the stuffing:

  • 2 aloo (boiled & mashed)
  • 1 tsp ginger paste
  • 2 green chilli (finely chopped)
  • 1 tbsp coriander (finely chopped)
  • ½ tsp coriander seeds
  • 1 tsp red chilli powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • ¾ tsp amchur powder
  • ½ tsp salt

  • Ghee (for roasting)

Step by step Method for making the paratha

Premium wheat flour is the main ingredient that goes into making the punjabi aloo paratha. Since it is the staple food this flour is used in making all of the other parathas as well. It is not only healthy but also easily available.

Steps to make the dough for paratha:

  1. In a large bowl take 2 cups wheat flour and add ½ tsp salt and mix well
  2. Take water and add it to flour knead the flour
  3. Then add 2 tbsp oil to the flour to make it soft
  4. Knead the dough slowly to make it smooth and soft
  5. Then use oil to grease and rest the dough for 15 minutes

Steps to make aloo stuffing for aloo paratha:

  1. In a large bowl take 2 potatoes, 1 tsp ginger paste, 2 finely chopped green chillies, 1 tbsp coriander and ½ tsp coriander seeds.
  2. Add 1 tsp red chilli powder, ½ tsp cumin powder, ½ tsp garam masala, ¾ tsp amchur powder and ½ tsp salt.
  3. Mix them well making sure all the ingredients are well combined properly
  4. The aloo stuffing is ready

How to Make Aloo Paratha:

  1. After the dough has rested for 15 minutes, knead the dough slightly
  2. Now pinch a small ball sized dough and roll about 4 inches in diameter
  3. Now place a ball sized prepared aloo stuffing in the centre
  4. Pull the edges together in the center and roll it in a ball
  5. Now sprinkle some wheat flour and roll slightly thick
  6. Place a hot tawa and place the rolled paratha and cook for a minute
  7. Flip the paratha when the base it is partly cooked
  8. Then brush ghee and press slightly and flip again once or twice till both the sides are cooked properly.

Tips

  • Boil the potatoes until fork tender. Do not overcook them
  • Mash the potatoes properly so that there are no chunks left
  • Add the spices according to your choices
  • Use ghee for roasting the paratha for better taste
